Sake cuisine has evolved in tandem with sake-sipping for at least seven hundred years. Whereas a European meal has courses with wines accompanying, the Japanese approach is just the opposite. Sake is the main course, with a parade of "sake no sakana" appetizers to enliven the evening.

Since opening in San Francisco in 2008, Delica has captivated Ferry Building visitors with its colorful display of tasty Japanese appetizers. At this month's Aftertaste a total of 39 junmai, ginjo and daiginjo sakes will be available for sampling—each accompanied by different appetizers from the Delica kitchen.
