Sakes made in southern Japan tend to be fuller in flavor than those from the north. They pair well with the adventurous flavors of Peruvian cuisine, especially the "nikei-style" dishes that originated with Japanese immigrants to South America a century ago.

We've selected 39 daiginjo, ginjo and junmai labels from southern Japan, including gold and silver award winners from the 2009 U.S. National Sake Appraisal. Chef Diego Alcantara's appetizer menu features cebiche, artichulos, causus and other La Mar favorites.
