Sake has played an important role in Japanese myth and ceremony since the dawn of history. In traditional Shinto belief sake symbolizes purity and is used at rites that commemorate a new beginning, like the topping off of a building, the onset of a new year or the start of a marriage.

This evening's tasting features 39 junmai, ginjo and daiginjo sakes, arranged by festival theme. In the New Year's section are premium daiginjo labels. The Setsubun sakes are more fiesty, to scare the demons away. Cherry Blossom season calls for something gay and festive, while at Tanabata we yearn for something that will "send us to the stars."
