With temperatures plunging below 70 degrees on some nights, it's warm sake season in Hawaii. And that's a good thing. Warming smooths out rough edges, cuts back acidity and amplifies the flavor that's already there. It's no coincidence that at this time of year people all over Japan are ordering their sake "okan," along with their favorite izakaya comfort foods like oden and nabe.

This evening's event features 39 junmai, ginjo and daiginjo sakes laid out as usual on the tasting tables. Starting at 7:00 p.m., okan honcho Yoshiharu Suzuki will preside over the warming station, offering guests a chance to try their sake nurukan (105, mildly warmed) or okan (115, well warmed), the preferred sipping temperatures. Most of the selections will be junmai, but we'll try a few ginjos and daiginjos too.
